Fenugreek
Fenugreek
seeds have a bittersweet flavor and when roasted leave a distinctive
aftertaste of caramel or maple syrup.
They can be cooked and served like oatmeal or used as a condiment. They add flavor to soups, stews, vegetables, chutneys, and pickles. Sprouted fenugreek seeds can be served as a salad. In some countries the leaves and young sprouts are eaten as a vegetable.
