Pepper
Green,
black, and white pepper correspond to the different stages of maturity of
the peppercorn.
Green peppercorns are sold dried or preserved in brine or vinegar. Black pepper is the most pungent. Pink pepper comes from a different species; it is a dried berry with a delicate flavor.
Buy whole peppercorns and grind them just before using them. Whole peppercorns add flavor to delicatessen meats, court bouillons, marinades, pates, and cheeses.
