Gluten Free Veggie Burgers


Deliciously simple to make, these gluten free veggie burgers feature quinoa, Indian spices and Indianlife Chutney.


Summer is the season for healthy outdoor cooking and BBQ! These tasty burgers are perfect for those on gluten-free diets and features quinoa, a versatile “superfood” rich in vegetarian protein.  Quinoa  is gluten free grain, and paired with potatoes, veggies and Indianlife Cilantro Chutney, it makes a delicious burger non-vegetarians will also enjoy.

Ingredients:

4 medium boiled potatoes, mashed

1 small carrot, finely chopped

1 cup green peas

1 cup onions, finely chopped

1 teaspoon finely grated ginger

2 teaspoons crushed green chillies

1 tablespoon chopped coriander

salt to taste

juice of 1 lime

1 teaspoon cumin seeds

1/4 cup of cooked quinoa

1 tablespoon gram or garbanzo flour*

2 tablespoons oil

For serving:

Indianlife cilantro chutney

Gluten free burger buns

lettuce

tomatoes

onions

 Instructions:

steam all the vegetables for 20 minutes

mash the vegetables

mix the mashed potatoes, vegetables and the cooked quinoa

heat oil and add cumin seeds and onions, sauté for a couple of minutes

add the vegetable mixture and cook on low heat for 6-8 minutes.

Add salt, ginger, green chillies, coriander, lime juice, gram flour and mix really well

Take sufficient mixture in the palm of your hand and shape into rounds

Brush a non-stick frying pan lightly with oil and cook each burger on both sides until golden brown

*Gram flour is a made from ground chickpeas or chana dahl. It is also known as chickpea or garbanzo flour.

To serve, slice the buns in halves, toast them

Spread the Indian life coriander chutney on the bun

Arrange lettuce leaves, then one burger, one onion slice and two tomato slices
