Here is a great recipe for the winter months. It is packed with protein, high in fibre and tastes delicious especially when it is served hot with Indianlife Naan.
Ingredients:
¼ cup olive oil
2 stalks of celery (chopped)
1 onion (chopped)
2 carrots (grated)
1 small jalapeno pepper
2 cloves of garlic (chopped)
1 teaspoon chilli powder
1/2 tablespoon ground cumin
1 tablespoon oregano
½ can (14 oz) organic diced tomatoes
1 can (341 ml) organic kernel corn
1 can (398 ml) baked beans
1 can (398 ml) organic kidney beans drained and rinsed
Salt to taste
Indianlife butter masala cooking sauce
Procedure:
Heat oil
Add the cut up vegetables, jalapeno and garlic cook until slightly soft
Stir in chilli powder, cumin and oregano stirring for a few minutes
Add the tomatoes, corn and beans
Add ½ bottle of Indian life butter masala sauce
Simmer for 20-30 minutes
Serve hot.
